Here is one awesome recipe to try! This simple, delicious recipe will be one that the whole family will love. You can also make the batch, store in 2 cup servings and enjoy all week long!

 

Eggplant w/Chicken and Sausage

Ingredients:

3 Big Eggplant (peeled and cubed)

2 lbs Ground Chicken

½ lb Hot Sausage

1 cup Roasted Red Pepper (sliced)

1 ½ cups Rao’s Tomato Basil Sauce

2 28 oz. cans diced tomatoes

¼ cup Grated Parmesan (optional)

 

In big fry pan:
Cook chicken and sausage and set aside. Drain.
Cook eggplant w/olive oil, salt & pepper.  

Add:

1 can diced tomatoes (with juices), 1 can diced tomatoes (drained of juice), roasted peppers, Rao’s tomato sauce, and chicken/sausage mixture.

Simmer 10-15 minutes.

Top with Parmesan if you like

Makes 8, 2 cup servings
